Yeast Dumplings with Plums and Plum Jam

This is a recipe my dear friend Susanne sent me today. She also took the photos.

250g plain flour
20g fresh yeast
125ml milk
1tbs sugar
grated lemon zest
a pinch of salt
25g margarine

Make a yeast dough. Just place the flour in a bowl and make a well in the middle. Mix luke-warm milk, sugar and crumbled yeast and pour it into the flour well. Cover it slightly with some flour. Let it rise in a warm draught free area for about 30 minutes. Ad the salt, lemon zest and margarine and work it into a smooth dough.

Form about 5 dumplings filled with plums. Spread a kitchen towel over a rack that can later sit in a large roasting pan. Place the dumplings on it and let them rise again.

Place the roasting pan in the oven and preheat it to 200°C. Place the rack with the dumplings in the oven and fill the roasting pan with 1l of boiling water. Close the oven quickly so that the steam stays inside.

Reduce the heat to 175°C and leave the dumplings in the oven for about 15-20 minutes.

Serve them with plum jam and custard.
