Carrot Soup

Here is the recipe of a very tasty and healthy carrot soup that is easy to make.

 

Carrot soup – 4 servings

2 carrots
2 onions
2 tbsps of oil
1 tbsp curry
9 oz red lentils
2 bay leaves
1.5 litres of vegetable stock
salt, pepper

Grate the carrots
Peel and chop onions finely
Frizzle the carrots and onions in oil with curry
Rinse lentils and add them
Add vegetable stock
Cook about 15 minutes until lentils are soft
Add salt and pepper

Serve with bread with cheese or ham

When I cooked it I only used 1 litre of veggie stock and added some a finely chopped clove of garlic and some finely chopped ginger.
